Goa's answer to Chicken Tandoori

This is an all time favourite Chicken recipe of Goa. It is in fact Goa’s equivalent of the Tandoori Chicken and never fails to please the taste buds.

Ingredients:

For the green marinade: Grind to a fine paste (without water) 1 bunch of coriander leaves, 20 green chillies, 20 flakes garlic, 10 peppercorns, 1 inch piece of tikki, 5 cloves, 2 tbsp sugar, pinch of jeera with juice of one lemon. Store in a glass jar in refrigerator. This paste can be used in stir fried vegetables, biryanis, cutlets, etc.

For the cafreal: 1 kg chicken, washed and cut into cafreal pieces, 2-3 tbsps green marinade, Pinch of haldi powder, 3-4 tbsps oil, 1 tbsp butter, Salt to taste

For garnish: 1 boiled potato, cut into chunks, 1 onion, petals, chopped coriander, 1 tbsp butter

Method: 

Apply green marinade to chicken along with a pinch of haldi and salt to taste. Marinate for 3-4 hours at least. The longer the better. 

Drop 3-4 tablespoons oil in a pan and shallow fry the chicken. Add the marinade liquid, cover and let cook. When done and dry, remove from pan. In a separate pan, add some butter and stir fry some more of the green masala, adding sugar and a little salt. When the masala begins to ooze out oil, add the fried chicken to it till it is nicely coated.

Serve garnished with butter fried onion petals, potato chunks and coriander.

Hello Sapna, I have tried Chicken Cafreal from some other recipes but didn`t quite enjoy them. Your recipe was easy to follow. I had to trim down on the chillies and garlic, but it still turned out delicious.

Do you have any recipes on fish?
